Roasted Asparagus and Eggs


Everyone needs a sexy little breakfast recipe that they can whip up in no time. This one just so happens to be it! 

If you've got everything in the fridge, a super impressive breakfast will be on the table in less than 20 minutes! 

Now who doesn't want that for a lazy morning? Or any morning, really. 


Whether this is for yourself, a loved one or a whole gang of people it's perfect. 

It ticks all the breakfast boxes: it's got eggs (duh), it's filling, there's toast, it's healthy, it's inexpensive and it's quick and easy. 

It's just as simple to make for one as it is for 10. As long as you don't mind frying eggs for 10 people, this'll be your new go-to 'I kind of want to impress you breakfast'!


The asparagus is crispy and slightly charred, the eggs are gooey and perfect the bread is toasted and spread with creamy ricotta. 

All that is missing is you, a cup of coffee and some light morning reading. 

Now get to the shop and make this the plan for Sunday breakfast!

Place the asparagus on a roasting tray and drizzle with olive oil, salt and pepper.

Place the asparagus in the oven and roast for 10-15 minutes.


While the asparagus is roasting think about getting a frying pan hot with a little oil to fry your eggs.


Crack the eggs into the frying pan and cook them just the way you like them.


Remove the asparagus from the oven and divide it between two plates. Place a fried egg on top and serves with bread that has been toasted and spread generously with ricotta.



Recipe, Serves 2


Bunch of Asparagus
2 Large Eggs
Olive Oil, Salt and Pepper
Ricotta, for spreading
Bread, for toasting

Heat the oven to 200C.
Place the asparagus on a roasting tray and drizzle with olive oil, salt and pepper.
Place the asparagus in the oven and roast for 10-15 minutes.
