Jalapeño Blood Orange Margarita

I have been obsessed with margaritas recently. If there is a tequila based drink on a menu, I'm ordering it. My roomie, Jess, serves these  jalapeño blood orange margaritas in the restaurant she works. WE LOVE THEM. 

At first I thought I wasn't going to like the jalapeño blood orange margarita, as my tolerance for spice is way low. Even though I love, love, love hot sauce I'm a bit of a wimp when it comes to spice. Although this drink is's the perfect kind of spice. Spicy from the jalapeño infused tequila, citrusy and fresh from the lime juice, vibrant and bright from the blood orange juice and a little sweet from the simple syrup. It's just perfect.  

Anyway, I knew that future Holly would want to drink many of these jalapeño blood orange margaritas. Since I began to crave one just after a week. I also knew that future Holly could not afford to live so lavishly and go out and order these as she wished. So present Holly decided to get all crafty and infuse tequila with jalapeño. Yes, buying a bottle of tequila is not exactly cheap but it works out cheaper than ordering multiple $10 margaritas! 

Besides who doesn't want to have the option of whipping up a delicious spicy margarita at a moments notice?!  Not this gal, anyway. Always a yes to spontaneous margarita making!  

I also had a coconut passion fruit margarita a week or two ago that I need to figure out to make. We'll have ALL the margarita drinks on Holly's Pantry! Then you can have a margarita party...everybody would want to go to that!

Recipe, per drink

1oz Jalapeño Tequila*recipe below
1.5oz Blood Orange Juice
1-2 Tablespoon Simple Syrup*recipe below
Juice of 1/2 a Lime
Ice Cubes

To Garnish
Lime Wedges and Lime Twists

Fill a shaker, or a container with a lid, with ice.
Add in 1oz tequila, 1.5 oz blood orange juice, 1 tablespoon of simple syrup and the juice of 1/2 lime.
Secure the lid and shake.
Fill a glass with ice and pour over the margarita.
Taste and add a little more simple syrup is needed.
Garnish with a wedge and twist of lime.

Jalapeño infused Tequila, makes 1 litre-easily halved

1 Litre tequila

Cut the Jalapeño into spears.
Empty a tiny bit of liquid from the tequila bottle.
Place the spears of jalapeño, seeds and all, into the tequila bottle and close.
Leave to infuse at room temperature for 12-24 hours. 
Remove the jalapeño from the tequila and use.

*Depending on how spicy the jalapeño is, or how spicy you want the tequila to be, the infusing will take anywhere from 12-24 hours. I left mine to infuse for 24 hours because I wanted it nice and spicy. Taste it after 12 hours and if you want it spicier, leave it for 24. If then it is too spicy, you can always dilute it with more tequila. Just keep in mind that you'll be mixing the tequila with other ingredients. 

Simple Syrup

200ml Water

100g Sugar

Combine the water and sugar in a small pot.
Place over a medium heat.
Heat until the sugar is dissolved.
Remove from the heat and allow to cool before using. 
Store in the fridge.
