Homemade Tomato Sauce

A simple tomato sauce is good with so many things- mixed with some pasta, as a dipping sauce for chicken tenders or spooned over some white fish.

This particular tomato sauce will be used on top of homemade pizza! Yum!

Roughly dice red pepper and red onion...

...gently sautée with olive oil until softened.

Add tomato purée- it intensifies the tomato flavour and colour.

Add two tins of plum tomatoes and...

...simmer for 40 minutes until slightly thickened and all the vegetables are broken down.

Use a potato masher to mash the sauce to break down any chunks of tomato. I want the sauce to be full bodied and rustic so I opted not to purée it!


1 Red Onion
1 Red Pepper
1 Tablespoon Tomato Purée
2 Tins Plum Tomatoes
1 Teaspoons Caster Sugar
Olive Oil, Salt & Pepper

Roughly dice onion and pepper.
Heat olive oil in a medium saucepan and gently sauté onion and peppers for 3 minutes until softened.
Add tomato paste followed by the two tins of plum tomatoes. 
Season with salt and pepper. 
Place on a lid and simmer gently for 30 minutes.
Remove lid and simmer for 10 minutes.
Using a potato masher, mash the sauce and break up any large bits if tomato that may be left.
Check for seasoning. If it tastes sharp add some caster sugar.
